All the flavor of a baked potato (including bacon) in a satisfying 30-minute soup.

Ingredients

slices bacon

medium sweet onion, chopped

carrots, chopped

cloves garlic, finely chopped

cups turkey or chicken broth

baked potatoes, chopped
3
cups shredded cooked turkey or chicken

can (15 oz) great northern beans, drained, rinsed

teaspoons ground coriander

teaspoon salt
1/2
teaspoon crushed red pepper flakes
1/4
teaspoon freshly ground pepper
Chopped fresh cilantro or parsley, if desired

Directions

  • 1 In 10-inch skillet, cook bacon until crisp; drain on paper towels, reserving 2 tablespoons drippings in skillet. Crumble bacon; set aside.
  • 2 Cook onion, carrots and garlic in hot drippings 6 minutes, stirring frequently, until tender. Stir in remaining ingredients except cilantro. Heat to boiling; reduce heat. Cover; simmer 10 minutes. Stir in crumbled bacon. Garnish individual servings with cilantro.
