Ingredients

  • 1  tablespoon olive oil
  • 2  cups cubed zucchini
  • 1/2  cup finely chopped onion
  • 1/2  cup grated carrot
  • 2  garlic cloves, minced
  • 2  cups thinly sliced savoy cabbage
  • 1  (28-oz.) can Progresso® Crushed Tomatoes, undrained
  • 1  (15-oz.) can Progresso® Cannellini Beans, drained
  • 1  cup chicken broth
  • 1  teaspoon dried rosemary leaves, crushed
  • 2  teaspoons sugar
  • 1/4  to 1/2 teaspoon salt

Directions

  1. In large saucepan or Dutch oven, heat oil over medium heat until hot. Add zucchini, onion, carrot and garlic; cook and stir about 3 minutes or until onion is tender.

  2. Add cabbage; cook and stir 2 minutes or until cabbage is tender.

  3. Stir in tomatoes, beans, broth, rosemary, sugar and salt. Bring to a boil. Reduce heat to low; cover and simmer 10 minutes to blend flavors.
