Looking for a hearty meatless dinner using beans and Progresso® Bread Crumbs? Then try this delicious broiled sandwich that’s ready in 30 minutes.

Ingredients

1/3
cup uncooked regular long-grain white rice
2/3
cup water
1
(15-oz.) can Progresso™ or Old El Paso™ black beans, drained, rinsed
1
cup chopped fresh mushrooms
1/2
cup sliced green onions
1/2
cup chopped roasted red bell peppers (from 7.25-oz. jar)
1/4
teaspoon garlic powder
1/2
cup Progresso™ Italian Style Bread Crumbs
4
(1 1/2-oz.) slices provolone cheese, halved
1
cup shredded lettuce
4
burger buns, split
ketchup, if desired

Directions

  • 1 Cook rice in water as directed on package.
  • 2 In food processor bowl with metal blade, combine cooked rice, black beans, mushrooms, onions, roasted peppers and garlic powder. Pulse to coarsely chop mixture. Add bread crumbs; pulse to mix. DO NOT PUREE.
  • 3 Shape mixture into 4 patties, 1/2 inch thick; place on broiler pan. Broil 4 to 6 inches from heat for 10 to 12 minutes or until patties are thoroughly heated, turning once.
  • 4 Place 2 pieces of cheese on each patty; broil an additional 1 minute or until cheese is melted. Place lettuce and patties in buns. Top patties with ketchup.
Tips  

Provolone is an aged cow’s milk cheese from southern Italy. Mild and smoky, provolone cheese is creamy-yellow in color. It’s a popular choice for Italian-style sandwiches.

Kidney, garbanzo or pinto beans can be use in place of the black beans in these veggie burgers. These lighter-colored beans, however, will not produce a dark-colored burger that mimics a hamburger.

To make vegetable burgers vegans will enjoy, omit the cheese or use soy-based, non-dairy cheese in place of the provolone cheese.
