Including cubed cooked chicken transforms the classic apple-celery-walnut combination into a satisfying main dish salad.

Ingredients

DRESSING

(8-oz.) container low-fat plain yogurt

tablespoons honey

teaspoon ginger

SALAD

cups cubed cooked chicken

cup chopped apple

cup seedless red grapes, halved

cup thinly sliced celery
1/2
cup raisins

lettuce leaves, if desired

tablespoons chopped walnuts

Directions

  • 1 In small bowl, combine all dressing ingredients; blend well.
  • 2 In large bowl, combine all salad ingredients except lettuce and walnuts. Pour dressing over salad; toss gently to coat.
  • 3 To serve, arrange lettuce on 4 individual plates. Spoon salad over lettuce. Sprinkle with walnuts.

To determine how much uncooked chicken you'll need for a recipe that calls for cubed cooked chicken, follow these guidelines: • One 2 1/2 to 3-pound fryer yields 2 1/2 to 3 cups. • Two whole chicken breasts (1 1/2 lb. with skin and bones, 3/4 lb. without) yield about 2 cups. • One 5-ounce can of chunk chicken (drained and flaked) yields 1 cup. • Cooked turkey can be substituted for cooked chicken in any recipe.
