    Ingredients

    • 2  cups frozen O'Brien potatoes
    • 1/4  cup canned chopped green chilies
    • 1/4  cup chopped fresh parsley
    • 1  small onion, finely chopped (1/4 cup
    • 2  cloves garlic, finely chopped
    • 1  can (15 to 16 ounces) pinto or kidney beans, rinsed and drained
    • 1  tablespoon vegetable oil
    • 3/4  cup salsa

    Directions

    1. 1Mix all ingredients except oil and salsa. Heat oil in 10-inch nonstick skillet over medium-high heat. Add potato mixture. Cook 8 to 10 minutes, stirring frequently, until potatoes are light brown. Serve with salsa.
