Tips & Techniques

  • High Altitude (3500-6500 ft):

    Follow High Altitude cake mix directions on box for two 8- or 9-inch pans, adding the soft drink mix to the dry cake mix. Toss 1/2 cup chocolate chips with 2 teaspoons Gold Medal® all-purpose flour before stirring into batter.

  • Success

    Use mini chips to make sure there are lots of chips and that they stay distributed in the cake.

  • Substitution

    Betty Crocker® Rich & Creamy creamy white frosting can be used for the Whipped frosting.

Ingredients

  • 1  box Betty Crocker® SuperMoist® white cake mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 1  package (0.13 oz) cherry-flavored or other red-colored unsweetened soft drink mix
  • 1/2  cup plus 2 tablespoons miniature semisweet chocolate chips
  • 1  container (12 oz) Betty Crocker® Whipped fluffy white frosting
  • Green and red food colors
  • 2/3  cup green jelly beans

Directions

  1. 1Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms only of two 8- or 9-inch round cake pans with shortening or cooking spray. In large bowl, beat cake mix, water, oil, egg whites and drink mix with electric mixer on low speed 30 seconds; beat on medium speed 2 minutes, scraping bowl occasionally. (Batter will be lumpy.) Stir in 1/2 cup of the chocolate chips. Pour into pans.
  2. 2Bake as directed on box for 8- or 9-inch round pans. Cool 10 minutes. Remove from pans. Cool completely, about 1 hour.
  3. 3In small bowl, stir 1 cup of the frosting with 10 to 12 drops green food color. Stir 10 to 12 drops red food color into remaining frosting. Frost sides of cakes with green frosting; press green jelly beans into frosting. Frost tops of cakes with red frosting; press remaining 2 tablespoons chocolate chips into frosting for seeds. If desired, cut cakes crosswise in half and arrange "slices" randomly on tray. To serve, cut into wedges. Store loosely covered at room temperature.

Why couldn't you use some dry watermelon jello in the cake mix?? I make a jello watermelon with a small box of lime & a small box of watermelon jello using ice-cream in the jello so it's a creamy color & the mini chips on top shoved in while you are still able to get them in. Everyone loves this. Round bowl with the green part in it with a weighted smaller bowl sprayed with Pam set in center till set. After set carefully pour your pink jello in the center.

Hi @SpringFrog4 - The Red Velvet cake would give this a much darker appearance and it may be more difficult to see the chocolate chips...but, I bet it would be super yum!

Honestly, I wasn't too crazy about the flavor that the soft drink mix adds. Next time I think I'll just stick to the food dye. I also used a decorating icing to make stripes down the sides instead of jellybeans. I think it looks better. I'm also not too big on eating jellybeans or other random candies on my cake. I made it for a potluck at work though and my co-workers loved it and even had to take pictures!

I wish I would have read the Tips and Techniques before I tried this cake. It turned out perfectly except the chocolate chips in the cake batter all settled to the bottom of the cake and melted. The chips were not set randomly in the cake as in the picture above. Hopefully tossing the chips in flour next time will result in a sporadic settling of the chips inside the cake.
