    Ingredients

    • 1 box Betty Crocker White Cake mix
    • 3  egg whites
    • 1/3 cup vegetable oil
    • 3/4 cup pink lemonade frozen concentrate-thawed
    • 1/2 cup water
    • Betty Crocker white frosting
    • red & green food coloring
    • mini-chocolate chips

    Directions

    1. 1Preheat oven to 325 degrees.
    2. 2Begin by tossing mini chocolate chips with 1 tablespoon of cake mix. Combine remaining cake mix with egg whites, oil, lemonade concentrate, and water, according to box directions.
    3. 3Tint the cake mix with red food coloring until the color is dark pink, about 4-6 drops.
    4. 4Fold in chocolate chips, and pour batter into two 9-inch non-stick cake pans that have been sprayed liberally with cooking spray.
    5. 5Bake as directed on box. Allow cakes to cool completely before frosting.
    6. 6To turn your cakes into "watermelon" slices, first divide your frosting into 2 separate bowls. Tint one with the red food coloring (or frosting gel), and the other with green, until you have your desired intensity.
    7. 7Start with the red frosting and cover the top of each cake layer, leaving about 1/4 inch border.
    8. 8Using the green frosting, cover the sides and border area. Top with mini chocolate chips for "seeds."
