A sweet and spicy watermelon salsa that uses ingredients fresh from your garden.

Ingredients

  • 2 cups finely chopped watermelon, seeds removed
  • 1/2 cup finely chopped cucumber, peeled and seeded
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped red bell pepper
  • 1/2 to 1 whole jalapeno pepper, seeded and diced finely
  • 1/4 cup finely chopped fresh cilantro
  • 1 tablespoon finely chopped fresh basil
  • 2 tablespoons honey
  • 2 teaspoons lime juice
  • Tortilla chips for dipping

Steps

    Combine watermelon, cucumber, onion, peppers, cilantro, and basil in a large bowl. Add honey and lime juice and stir to coat.

    Chill for at least half an hour in the refrigerator. Serve with tortilla chips.

    *Watermelon has a lot of liquid naturally in it. Before serving pour out the excess liquid so your salsa isn't too runny.

  • Watermelon has always been one of my favorite fruits, but this time of year it is at its prime – extremely juicy and sweet. I have many swimsuit clad memories as a kid eating watermelon and having watermelon seed spitting contests with my friends. I love watermelon simply chilled, by the slice on a hot summer day. But I can never say no to anything with a Mexican influence, so watermelon salsa -- why not? Watermelon replaces the tomatoes in this Watermelon Salsa recipe. This salsa is sweet and spicy – a refreshing combo that would be an asset at any outdoor get together. Served with salty tortilla chips, it becomes completely addicting. I was worried that maybe the watermelon wouldn’t hold up in a salsa, but it still had the crunch that I crave with regular salsa because of the fresh cucumbers, onions, peppers, and jalapenos in it. My jalapeno was super hot so I only added half, but if you like your salsa spicy, add a whole one. This salsa can be made all with fresh ingredients from your garden – a perfect summer appetizer. Leftover Watermelon Salsa? Not that you should plan on having any leftovers … but if you happen to have some extra salsa, it’s great served over grilled fish or chicken.
