A creamy dip made from cannellini beans that is perfect for dipping pita chips, carrots, celery, or jicama. Garlicky and full of herbs, you would never know that this dip is good for you.

Ingredients

  • 2 (15 ounce) cans cannellini beans
  • 4 cloves garlic
  • 4 tablespoons fresh lemon juice
  • 2/3 cup olive oil
  • 1/2 cup fresh Italian parsley leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 bag pita chips

Steps

    Rinse and drain cannellini beans. Add to the food processor along with garlic, lemon juice, olive oil, parsley, oregano, salt, and pepper.

    Puree until smooth. Check for seasoning, add more salt and pepper as needed.

    Serve with pita chips.
