Oatmeal and pecans paired together dipped into melted white chocolate. A sprinkle of cranberries adds delight!

Ingredients

cup chopped pecans
1
package (14 oz) Pillsbury™ Simply…™ refrigerated oatmeal brown sugar cookies
1
cup white vanilla baking chips
1
tablespoon shortening
3
tablespoons finely chopped dried cranberries

Directions

  • 1 Heat oven to 350°F. Place chopped pecans on plate. Roll top and sides of each cookie in pecans; press slightly into dough. Place on ungreased cookie sheet.
  • 2 Bake 12 to 16 minutes or until edges are golden brown. Cool 5 minutes; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes.
  • 3 In small deep microwavable bowl, microwave chips and shortening uncovered on High about 1 minute to 1 minute 15 seconds, stirring once halfway through microwaving, until melted.
  • 4 Dip half of each cookie into melted chips. Sprinkle with chopped cranberries. Place on waxed paper.
  • 5 Allow 20 minutes for coating to set.
Tips  

If you want the coating to set up faster, just place the dipped cookies on a cookie sheet or plate in the refrigerator for about 10 minutes.

You can use chopped walnuts in place of the pecans if you like.
