Dinner ready in 20 minutes! Enjoy flaky fish served with honey and chive sauce – a delicious meal!

Ingredients

Fish

1
teaspoon margarine or butter
1
lb. cod or orange roughy fillets (up to 1/2 inch thick), cut into 4 pieces
1/4
teaspoon salt, if desired

Sauce

1/3
cup chicken broth
1
teaspoon cornstarch
2
tablespoons fresh lemon juice
2
tablespoons honey
1/8
teaspoon pepper
2
tablespoons chopped fresh chives

Directions

  • 1 Spray large nonstick skillet with nonstick cooking spray. Melt margarine in skillet over medium-high heat. Sprinkle cod fillets with salt; add to skillet. Cook 4 to 5 minutes or until golden brown.
  • 2 Gently turn fish; slowly add 1/2 cup water. Reduce heat to medium-low; cover and cook an additional 4 to 6 minutes or until fish flakes easily with fork.
  • 3 Meanwhile, in small saucepan, combine broth and cornstarch until well blended. Add lemon juice, honey and pepper; cook, stirring constantly, until thickened and clear. Stir in chives.
  • 4 To serve, use slotted spoon to transfer fish to serving plates. Serve sauce over fish.
Tips  

For best color and flavor, add chives to sauces after they are cooked. Add even more color to your plate by garnishing the fish with lime and lemon wedges.
