The rich flavors of wild mushrooms, onion and chicken broth richly season Arborio rice to create a creamy risotto that's truly an eating experience.

Ingredients

tablespoons butter or margarine

small onion, finely chopped (1/4 cup)

ounces wild or white mushrooms, sliced (2 1/2 cups)

cup uncooked Arborio or short-grain rice
1/2
cup freshly grated Parmesan cheese

cups chicken or vegetable broth

Directions

  • 1 Cook butter, onion and mushrooms in 10-inch skillet over medium-high heat 2 minutes or until onion is soft. Add rice; stir to coat with butter.
  • 2 Stir in chicken broth.
  • 3 Heat to boiling; stir once thoroughly and reduce heat to simmer. Cover; cook 20 to 25 minutes or until rice is almost tender and liquid is absorbed. Stir in cheese. Let stand covered 5 minutes.
Tips  

This recipe uses an easy cooking method. Traditional risotto cooking requires adding broth in small amounts throughout the cooking time.

Using high-starch Arborio or short-grain rice assures the creamiest texture.
