The hot bacon-flavored dressing slightly warms and softens the spinach greens. If you wish, garnish each serving with wedges of hard-cooked egg.

Ingredients

4
cups torn fresh spinach
2
cups cubed smoked turkey
1
cup sliced fresh mushrooms
1/2
cup shredded carrot
1/4
cup slivered almonds, toasted if desired*
3
slices bacon, cut into 1/2-inch pieces
1/3
cup vinegar
1
tablespoon honey
1/4
teaspoon salt
1/8
teaspoon pepper

Directions

  • 1 In large bowl, combine spinach, turkey, mushrooms, carrot and almonds. Set aside.
  • 2 Cook bacon in small skillet over medium heat until crisp. Remove bacon from skillet; drain on paper towels.
  • 3 Reserve 2 tablespoons drippings in skillet. Add vinegar, honey, salt and pepper; cook and stir until hot. Pour over spinach mixture; toss gently. Sprinkle with bacon. Serve immediately.
Tips

* To toast almonds, spread on cookie sheet; bake at 350°F. for 5 to 7 minutes or until golden brown, stirring occasionally. Or spread in thin layer in microwave-safe pie pan. Microwave on HIGH for 4 to 7 minutes or until golden brown, stirring frequently.
