Relish this delightful side dish made using spinach - ready in just 10 minutes.

Ingredients

1
tablespoon oil
2
garlic cloves, minced
1
(10-oz.) pkg. prewashed fresh spinach, stems removed
1/3
cup raisins
1/4
cup shelled sunflower seeds or pine nuts
2
teaspoons sugar
2
tablespoons white wine vinegar

Directions

  • 1 Heat oil in nonstick Dutch oven over medium heat until hot. Add garlic; cook 1 minute.
  • 2 Add spinach and raisins; cook and stir about 1 minute or just until spinach is barely wilted. Remove from heat; stir in sunflower seeds, sugar and vinegar.
Tips

Hulled sunflower seeds, available in health food stores, make a crunchy, nutty addition to salads, trail mixes and baked goods. They're available raw or roasted, plain or salted.
