    Ingredients

    • 3 c. warm milk
    • 2 tsp. yeast
    • 3  eggs
    • 1 tsp. salt
    • 1/4 c. oil
    • 3 c. flour

    Directions

    1. 1Combine warm milk (lukewarm, not hot) and yeast. Let stand so yeast activates.
    2. 2Combine all ingredients, adding milk/yeast and dry ingredients alternately. Mix with electric mixer until batter is smooth.
    3. 3Place batter in a large pan or bowl with enough room for batter to rise. Cover with a towel. Let batter stand in a warm place until bubbly, about an hour, stirring once about half way.
    4. 4Cook pancakes on oiled griddle. ENJOY!
    5. 5Note: Leftovers can be refrigerated and reheated in the microwave later. Great kids' snack with peanut butter!
    6. 6This recipe will feed a family of four. I double it for my family of six and have leftovers for quick weekday breakfasts or after-school snacks. Wonderful with maple syrup or blueberry syrup!
