Yeast Pancakes

This unique pancake batter is yeast-based and rises before you cook the pancakes on a griddle.

Ingredients

cups warm milk
2
teaspoons yeast
3
eggs
1
teaspoon salt
1/4
cup oil
3
cups flour

Directions

  • 1 Combine warm milk (lukewarm, not hot) and yeast. Let stand so yeast activates.
  • 2 Combine all ingredients, adding milk/yeast and dry ingredients alternately. Mix with electric mixer until batter is smooth.
  • 3 Place batter in a large pan or bowl with enough room for batter to rise. Cover with a towel. Let batter stand in a warm place until bubbly, about an hour, stirring once about half way.
  • 4 Cook pancakes on oiled griddle. ENJOY!
  • 5 Note: Leftovers can be refrigerated and reheated in the microwave later. Great kids snack with peanut butter!
  • 6 This recipe will feed a family of four. I double it for my family of six and have leftovers for quick weekday breakfasts or after-school snacks. Wonderful with maple syrup or blueberry syrup!
