    Ingredients

    • 1 cup warm water
    • 3 1/4 cups bread or all-purpose flour
    • 1 1/4 tsp active dry yeast
    • 2/3 cup (about 1 1/2 medium) Yukon Gold potatoes, boiled and mashed
    • 1 tbsp butter
    • 1/2 tbsp salt

    Directions

    1. 1In the bowl of a stand mixer, combine all ingredients and mix until well combined, or until the dough begins to pull away from the sides of the bowl.
    2. 2Pour dough on a lightly floured counter top and knead about 5-10 minutes, or until the dough is soft and smooth.
    3. 3Place dough in a lightly greased bowl, cover and let rise until doubled, about 1 hour.
    4. 4Punch dough down and shape into an batard, or oval shape, pulling the sides down and under to tighten the top of the loaf. Place the dough in a greased 8 x 5-inch loaf pan, cover and let rise until doubled, about 1 hour.
    5. 5Preheat oven to 375 degrees F. Bake dough for about 30 minutes or until golden brown on the top. Allow to cool 10 minutes in loaf pan before removing from the pan and letting cool completely on a wire rack.

    Hi, Love to bake and I do bake my own bread......this sounds good and I've not made a potato bread yet ......am going to make this tomorrow.....thanks for the recipe ! I'll post the reuslts as soon as I make this........... Adeline
