More About This Recipe

  • Zabaione is a sophisticated dessert that’s perfect for a fashion week party!

It’s meant to be served as an aperitif. It’s a creamy confection originated in Italy and can be served with an array of fresh fruit… figs being the customary choice. It’s made with egg yolks, sugar and a sweet white wine.

I used a Prosecco made by Lamarca and a tablespoon of Marsala, which both worked perfectly when whipping up this yummy treat. The texture is smooth and frothy and when served cold, it’s extremely refreshing. It tastes similar to light custard, but has more of a robust flavor because of the sparkling wine.

There are few ingredients, so it’s fairly easy to make this Zabaione dessert. The only time consuming part is waiting for it to cook and thicken over a double broiler (or metal bowl over boiling water), but the prepping is easy.

    Here’s how to make…

Whisk together egg yolks and sugar.

Add in the Prosecco and Marsala and continue to whisk. Place over a double broiler and whisk until the mixture has expanded and is frothy in texture.

Serve in mini-martini glasses with tiny spoons. Garnish with blueberries to resemble “polka-dots” to add a little touch of fashion!

You can also create your own yogurt polka-dots (or other shapes) by placing yogurt in a piping bag, piping out a design on a cookie sheet and then freezing! It’s an easy way to add garnish to your plate. Or add one into the middle of your creamy Prosecco!

    Enjoy!
