Ways to use Coke in a Slow Cooker
As the calendar turns to fall, it's time to bust out the slow cooker and come home to a delicious-smelling house with dinner ready to go. MORE+ LESS-

There’s a time and place for complex recipes, but for me, the slow cooker is not one of those places. I generally resemble something like a cyclone in the mornings. Blowing around the house trying to get ready for work. So if I’m also trying to throw something into the slow cooker I definitely don’t have time to get all fancy-schmancy. (Especially if I want to be on time).

But did you know about a secret ingredient that will make your recipes go even faster? Coca-Cola serves as a perfect marinade to help keep your meats oh-so-tender during the slow cooking process. It can also take the place of sugar in many recipes.

Enter the 3 Ingredient Shredded Beef Tacos. It doesn’t get much easier than this! 

All you need is 3 pounds of bottom round (or chuck roast or rump), Coke, and canned chipotle peppers in adobo sauce. (P.S. Speaking of fancy-schmancy, check out my new cutting board! Best. Gift. Ever. 


Finely mince up the peppers. Use 2-3, depending on your spice preference. These will give the meat a rich, smoky flavor. Stir them into 10-12 ounces of Coca-Cola Classic along with 1-2 teaspoons of the adobo sauce. (Yes, I know 12 ounces is just a can, but I could only find a bottle, so I measured). 


Place your meat in the slow cooker and pour the chipotle-cola mixture over the top. It’s important to use regular Coke and not diet. The sugar from the soda will caramelize and combine with the chipotle for a rich smoky flavor. The acid from the soda will help break down the meat to make it extremely tender. Cook on high for 4-5 hours, or on low for 7-8 hours. (You can actually marinade the meat overnight in the mixture to further tenderize the meat, but definitely not necessary).


Once the meat has finished cooking, remove and shred with two forks. Return to slow cooker and stir into the cooking liquid until most of the liquid has been absorbed. At this point, taste the meat and see if it needs salt. (OK, so technically that’s a 4 ingredient, but does salt really count?) You can add in more of the adobo sauce and/or more minced chipotle peppers. The slow cooking process really mellows most seasonings and sauces, so it’s good to season at the end. If you like it spicy, I say add some more flavor! Keep warm until ready to serve. 


At this point, what to do with the finished product is up to you! I think the chipotle flavor lends well to Mexican dishes. Tacos and burritos would be a super easy way to use this yummy meat… simply add tortillas and your favorite toppings! It would also be great on tortas or even in beef enchiladas. (BTW… you can use some of the extra adobo sauce to make a chipotle sour cream or yogurt sauce). And it’s as easy as that! 1, 2, 3!
