Pancakes. Fruit salad. Yogurt. Bacon. Breakfast foods, right? Yes, but breakfast can also be a really fun dinner sometimes - and one that kids love. Earlier this week, that's just what my family had.
The plan was hatched midday when I was lacking inspiration for that evening's dinner. I asked my four-year-old for help deciding (he's quite the menu planning whiz, actually). His response? Pancakes!
Pancakes. Many people like them. Our whole family does, in fact. But my son? He doesn't just like them. He loves them. He craves them. And then, he devours them. If Will was a food, he'd be a pancake, hands down.
The key with planning a breakfast for dinner night is to think bigger than your typical breakfast. While a batch of pancakes, some bacon and some fruit might be good in the early morning, you need a little more food for nighttime eating.
Start with your carb, such as pancakes, waffles or French toast. Add in proteins like scrambled eggs and sausage or an omelet and bacon. Then, add in your fruits and veggies. You could go for a yummy fruit salad or go more brunchy with a spinach salad with fresh berries and nuts. Another option? Combine the eggs and veggies in a frittata or quiche.
