Bye Bye Boring Broccoli

Easy broccoli recipe with breadcrumbs and balsamic vinegar MORE+ LESS-

Broccoli. It seems like it’s a vegetable that you either love or hate. Or maybe that’s just in my house. My daughter loves it. My son hates it. There’s no middle ground. Personally, I love it as well. Raw and dipped in homemade ranch dip. In a stir-fry or pasta dish. Or as a side dish too. My favorite way to eat broccoli as a side is to roast it. And it’s also the fastest way, besides raw. One thing I don’t like about broccoli is when it’s over-cooked.

Scratch that. There’s another thing I don’t like is photographing broccoli. Too soon does it lose the vibrant green color. And it isn’t exactly a pretty vegetable to begin with. I hope you won’t judge this recipe for Parmesan Crusted Balsamic Roasted Broccoli on my photograph alone. It’s really rather tasty and well liked in our house.

Normally, I’ll just toss the broccoli with a little olive oil and balsamic vinegar. This time I decided to dress it up a bit. I added some stone ground mustard to the oil and vinegar mixture and topped it with a crispy parmesan breadcrumb mixture. Another low-effort way to add additional flavor is by tossing some toasted pine nuts with the broccoli.

This broccoli dish would be a great addition to a meal with Roasted Chicken.
