It’s times like that when I am totally tempted to phone in a pizza or say yes to my son’s hopeful, “Can we just pick up Chinese food?” But honestly, I prefer homemade to take out. And I want a fresh meal – and not necessarily the usual go-to pastas that dominate the fast-cook department.
Hello, rice. Hello, chicken. Hello, Super Easy Chicken Broccoli Bowl.
This takes all of maybe 15 minutes to make (less, if you and your family work together). And it tastes great. Filled with chicken, broccoli and slivers of carrots, everything is coated with a tasty Asian-inspired sauce.
How can you make this so fast?
Let’s talk about rice for a moment. Fresh rice can take somewhere been a half hour and an hour to cook. That’s a problem if you are trying to get dinner on the table fast. If you have a programmable rice cooker, then you can set it earlier in the day and have the rice when you want it.
But if you don’t want to make it, there is a wealth of fast rice products in the freezer area and the rice aisle. Choose whatever works best for you. And one option that might not come to mind? Drop in to your local Chinese food restaurant – you can buy containers of piping hot, perfectly cooked rice for only a dollar or two.
As for the chicken: Use leftovers if you have them. If not, a rotisserie chicken works fabulously too.
Then that just leaves the easy-peasy sauce, fast-cooking frozen broccoli and raw carrots.
