Easy Recipes to the Rescue

The weatherman predicted a snowfall of roughly two inches overnight into today. Reality? We got at least six inches of the white stuff ... then it rained and compacted it into about four inches of very heavy and wet snow. Did I mention that my driveway is very long and wide? And we shovel it by hand? And my trusty car is a Honda Civic (not exactly known for its prowess in challenging driving conditions).

Oh, yes, if there was ever a night that we needed an easy recipe for dinner, tonight is it.

But what is an easy recipe anyway? To me, an easy recipe is one that can be made in less than 30 minutes with minimal hands-on time (Sorry, Rachael Ray, that means most of yours are out!). If it can use just a few dishes and be really flavorful, that's even better.

Beer Batter Fish - With just a few ingredients that you probably already have, this recipe will keep you on your feet while it cooks, but leave your hands free to get the rest of dinner ready at the same time.

Best Chicken Chili Recipe - If there is one meat that screams cold winter day, it's chili and this recipe is a cinch. Everything goes into one pot and simmers, with just an occasional stir. Does it get any easier?

Quick Beef Tips and Vegetables - Beef, vegetables and rice. Yum! What I love most about this recipe though is that it's ready in about 15 minutes, including prep time. How awesome is that?

Savory Black Beans and Rice - This is one of my own recipes, and it's a go-to for a quick meal for my family.  When I think black beans and rice, I usually think spicy, but this recipe isn't meant to be spicy. That means that my two-year-old can eat it up right along with the rest of us. And don't worry, it's still high on flavor.
