Your barbecue grill is good for more than just charring up racks of ribs – you can make dessert with it, too.
You've probably already broken in your grill for the season, busting out some ribs, chicken or perhaps even a steak or two. But get your mind off the butcher for a minute and think about how to use your grill to bring out the best in this season's fruit.
If hot fruit doesn't immediately appeal to you, just think about the caramelized goodness of, say, a pineapple upside-down cake or bananas foster. Yum, right? Well, you can achieve these sweet, toasty flavors without heating up your oven or subjecting your guests to open flames at the table.
To begin, make sure the grate is cleaned thoroughly and heat up your grill. In fact, if you're going to be doing this often, consider buying a separate grate just for fruits and veggies.
Fruits like bananas, pineapple, apples, peaches, plums and apricots are ideal for grilling. Just cut them in half (or into slices--ideal for a pineapple), brush them with butter and place them cut-side down on the grill until you get some nice marks. You can also use oil instead of butter, and even sprinkle your fruit with sugar, cinnamon, cardamom or other spices for a kick.
Berries are also good with a bit of char on them, but you should place them in aluminum foil to keep them from slipping through the grates.
