Traditional Kalua pork is a Hawaiian delicacy, requiring an underground oven and often starring as the centerpiece to festive island celebrations. But you can make an equally rockin' dish using that slow cooker that's probably been collecting dust in your cupboards.
Start with a three-pound loin roast and cut it in half, seasoning the whole thing with salt and pepper. Now brown it in a large skillet to get some nice color – which also means flavor – on the meat.
Meanwhile, mix 2 cups of unsweetened pineapple juice, one can of crushed pineapple with its juices, 1/2 cup of brown sugar, 1/2 cup of sliced celery, 1/2 cup of cider vinegar and 1/2 cup of low-sodium soy sauce in a bowl.
Now, just place the browned meat in your slow-cooker and cover it with the pineapple and seasoning mixture. Place the cover on and let the meat stew for four to six hours until the scent of Hawaiian pork fills the house and the meat falls apart under a fork.
