No brunch is complete without an old school quiche, just like mom used to make.
It's no secret that eggs are just about the cheapest form of protein around, which is why quiche – and its cousin, the frittata – makes a perfect main dish for brunch on a budget. And you can wipe the sweat from your brow, because you don't even need to make your own crust.
The hardest part might just be deciding what kind of meat, cheese and veggies you want to use for your quiche. In general, it's a good idea to choose one of each. Here are some suggestions for killer combinations: bacon, cheddar and spinach; chicken, goat cheese and roasted red peppers; ham, swiss and broccoli. Not so hard, eh?
Once you have that nailed down, you can make your custard. You'll need anywhere from four to eight eggs, depending on the volume of your aforementioned accoutrements. Whisk those together with about a cup of milk or half-and-half, and salt and pepper to season. Custards are always best when left to sit a while, so you can store this in your fridge overnight.
When you're ready to assemble it all, fill a store-bought pie crust with your meat, cheese and veggies, then pour the custard over the top. Pop this in the oven for about 30 minutes at 375 degrees.
