If you love baked goods, but measuring out ingredients to a T isn't exactly your thing, you might find that soda cakes can help ease your aversion to the science of baking – mostly because they're flippin' easy to make.
The best part about soda cake is that you only need two ingredients: a packaged cake mix and a can of diet soda.
Why does it have to be diet? Well, it doesn't have to, but using a regular variety typically results in a sickly sweet cake. Good news is that you can use whatever flavor you like. For example, yellow cake and orange or lemon soda turns out a pretty great dish, as does chocolate cake mix and cherry soda.
In order to whip up your soda cake, just mix together a box of cake mix with a 12-ounce can of soda, making sure to pour your liquid slowly to avoid overflow. It may be tempting, but you don't need to add any eggs or oil. Resist the urge.
