What is it about hot days that makes you want to run screaming from the kitchen? Forget cooking on a burner (or worse, the oven!) -- all you want is a frosty beverage and a seat in front of the air conditioner, right?
That's why on days like that, I try to skip the intense meals and aim for something a little more simple.
I adore salads for hot days. You can whip up a big batch of Antipasti Pasta Salad and eat it all week (toss in some grilled chicken or beans for a little protein with it). Or try something like Pear and Blue Cheese Salad (again, add a little protein to it so that it's a full meal), which has sweet pears, creamy blue cheese and meaty walnuts. Another great option? Asian Tossed Salad, which is packed with veggies.
Sandwiches like Greek Chicken Salad Sandwiches are always good too. The flavors in this sandwich are fabulous - briny olives, salty feta, tender chicken, crunchy cucumbers. Another delicious sounding sandwich is the Layered Italian Sandwich, which is made on focaccia bread with pesto, turkey, salami and more. The combination sounds mouthwateringly good.
Like a hot dinner even on hot days? For a light, but tasty dinner, Grilled Caprese Lasagna is great - but you will need to cook the lasagna noodles first since the lasagna building demands their flexibility and it only spends about 10 minutes on the grill. The good news is that you can cook the noodles up to a day in advance (it's best if you prepare the lasagnas at the same time). You can also grill up something delicious like Grilled Marinated Pork Chops, Easy Grilled Shrimp or Marinated Grilled Chicken and serve it over a salad with a tasty dressing like Lemon Rosemary Vinaigrette.
