Banana Bread Mug Cake

Moist, sweet and packed with pure banana flavor, this might just be the best mug cake you’ve ever tasted. (Seriously though.)

Ingredients

  • 1 ripe banana
  • 3 tablespoons buttermilk
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1/3 cup Betty Crocker™ Bisquick™ Pancake & Baking Mix Original
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 chopped walnuts, plus more for garnish
  • 1/4 teaspoon cinnamon
  • Whipped cream (optional)

Steps

    In a medium bowl, mash banana with a fork. Add buttermilk, oil and egg; mix to combine.

    Add Bisquick™ mix, brown sugar, baking powder, 1/4 cup chopped walnuts and cinnamon. Mix until well combined.

    Divide batter between 2 coffee mugs.

    Microwave for about 2 minutes, or until the edges of the top is try and the edges of the banana bread have pulled away from the sides of the mug. Do not overcook; the banana bread will continue to cook a bit after you take it out of the microwave.

    Cool slightly. Serve topped whipped cream and more chopped walnuts, if desired.

  • In the summer, I try to avoid turning on the oven at all costs, but what I definitely cannot do is to keep my sweet tooth under control. So when I’m craving something sweet, mugs cakes are lifesavers. Plus, they're fun and simple to make, with a few ingredients. I’ve tried a bunch of mug cakes but haven’t always been happy how they turned out, since they can have a weird texture. But that is not the case with this Banana Bread version. Seriously, this is the best mug cake I’ve ever tasted before: it’s moist, sweet and full of pure banana flavor. So, drop everything and go make this immediately! It just takes two minutes. ;)
