Ingredients

cups raisins
Boiling water
1/2
cup firmly packed brown sugar
1/4
cup margarine or butter, softened
1
cup cornmeal
1/2
cup molasses
2
cups buttermilk
1
egg
3
cups all-purpose flour
2
teaspoons baking soda

    Heat oven to 350°F. Grease and flour bottoms only of two 1-quart casseroles or two 8x4-inch loaf pans. In small bowl, cover raisins with boiling water; let stand 5 minutes. Drain.

    In large bowl, combine brown sugar and margarine; beat until light and fluffy. Add cornmeal, molasses, buttermilk and egg; blend well. Stir in flour and baking soda until well mixed. Fold in raisins. Pour batter into greased and floured casseroles.

    Bake at 350°F. for 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from casseroles. Cool 1 hour or until completely cooled. Wrap tightly and store in refrigerator.
