    Heat oil in 10-inch nonstick skillet over medium-high heat. Add vegetables and dressing mix.

    Cover and cook 5 to 7 minutes, stirring frequently, until vegetables are crisp-tender.

Expert Tips

Don’t bother with extra-virgin olive oil in this sauté. Heat destroys the flavor of this fruity oil, so it’s best saved for salad dressings and other dishes that don’t need cooking.

Toss leftovers with rinsed and drained canned white beans. Heat briefly and use to fill toasted pita bread for a tasty vegetarian sandwich.
