Caramel Monkey Bread Muffins with Icing

These gooey, sweet little muffins are the perfect cure to a dreary morning. They're full of a cinnamon and caramel and topped with a simple sweet icing. MORE + LESS -

Ingredients

can (16.3 oz) Pillsbury™ Grands!™ Homestyle Refrigerated Biscuits Original
1/4
cup granulated sugar

teaspoons ground cinnamon

tablespoons butter
6
tablespoons brown sugar
1/3
cup powdered sugar

tablespoon milk

    Preheat oven to 350ºF. Spray 8 muffin wells in a muffin tin with non-stick cooking spray. Open package of biscuits and separate into 8 biscuits. Cut each biscuit into 6 pieces.

    In a medium bowl, combine the sugar and cinnamon. Toss each biscuit piece in the sugar mixture to coat.

    Place 6 pieces of biscuit in each of the 8 muffin wells. Set aside.

    In a medium skillet, melt the butter over medium heat. Stir in the brown sugar and whisk constantly until it just begins to boil. Remove from the heat and drizzle one teaspoon of the caramel mixture over each muffin.

    Place in the oven and bake for 13 minutes or until the biscuits are golden and cooked through. Remove from the oven and immediately remove the biscuits from the pan and place on a cooling sheet set over parchment paper, wax paper, or foil.

    Add 1/4 cup of powdered sugar to a measuring cup. Stir in the 1 tablespoon of milk and stir until well combined. Drizzle the icing over each of the muffins. Serve immediately.

We can all agree that mini food is tastier, cuter, and totally more fun than its full-sized counterpart, right? These little Monkey Bread Muffins totally fit that bill. My little monkeys love a big ol’ serving of monkey bread in the morning, but it just ends up being such a waste in my house. My husband leaves for work at o’dark thirty, so it’s just the three of us here for breakfast. Try as we might, we can never finish off a full Bundt pan’s worth of monkey bread. These little muffins are the perfect fix for that problem! I used Grands! Original biscuits to make just 8 monkey muffins and it was the perfect amount for the three of us. My teenager ate three, my daughter ate two, and throughout the day, I ate the rest, picking a piece off each time I walked through the kitchen. (*burp*) Pop those suckers out of the muffin tin and place them on a rack. Whip up a simple powdered sugar icing and drizzle it over your monkey bread muffins. Then get busy shoveling them in yo’ face.
