Cheesy Potatoes and Ham Foil Packs

It’s hard to wrap your head around how just four ingredients: Gouda cheese, Dijon mustard, diced ham and fresh chives can create so much flavor with so little effort, but trust us, your mind is about to be blown.

Ingredients

  • 2 tablespoons butter, melted
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 medium (about 7 oz each) Yukon gold potatoes, cut in 1-inch pieces
  • 2 cups (about 12 oz) diced ham, (3/4-inch dice)
  • 1 1/3 cups shredded Gouda cheese
  • 2 tablespoons chopped fresh chives

    Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Spray with cooking spray.

    In large bowl, mix melted butter, mustard, salt and pepper. Add potatoes and ham; stir until evenly coated. Divide mixture among sheets of foil.

    Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.

    Place packs on grill over medium heat. Cover grill; cook 12 minutes. Rotate packs 1/2 turn; cook 8 to 10 minutes longer or until potatoes are tender. Remove packs from grill; cut large X across top of each pack. Carefully fold back foil; sprinkle potatoes with cheese. Loosely close; let stand 3 to 5 minutes or until cheese is melted. Garnish with chives.

    To make in oven, place packs on cookie sheet. Bake at 375°F 40 to 45 minutes or until potatoes are tender. Add cheese and chive garnish as directed above.

    For extra flavor, try using an aged Gouda cheese in this recipe.

    Two-bite Yukon potatoes can be substituted for regular Yukon potatoes in this recipe. Cut each potato in half, and prepare as directed in recipe.
