Ingredients

cup butter or margarine

small green bell pepper, chopped (1/2 cup)

cup sliced mushrooms (3 ounces)

cups ready-to-serve chicken broth

cups cut-up cooked chicken

jar (2 ounces) diced pimientos, drained

toasted bread triangles or 3 cups hot cooked rice

    Melt butter in 3-quart saucepan over medium-high heat. Cook bell pepper and mushrooms in butter, stirring occasionally, until bell pepper is crisp-tender.

    Stir in flour, salt and pepper. Cook over medium heat, stirring constantly, until bubbly; remove from heat. Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute.

    Stir in chicken and pimientos; cook until hot. Serve over toasted bread triangles.

Expert Tips

  • Instead of using fresh mushrooms, you can use a 4-ounce can of mushroom pieces and stems, drained. For a little extra flavor, save the mushroom liquid and use it as part of the milk.
