Chicken and Rice Oriental

Ingredients

tablespoons butter or margarine

pound boneless skinless chicken breast, cut into 1-inch pieces

package Chicken Helper™ chicken & herb rice
2 3/4
cups hot water

tablespoons soy sauce
1
tablespoon packed brown sugar
1
tablespoon crunchy peanut butter
1
bag (1 pound) frozen broccoli, red peppers, onions and mushrooms, thawed

    Melt butter in 10-inch skillet over high heat. Cook chicken in butter 3 to 5 minutes, stirring occasionally, until outside turns white.

    Stir in uncooked Rice, Sauce Mix and hot water. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer about 9 minutes, stirring occasionally, until most of liquid is absorbed.

    Stir in soy sauce, brown sugar and peanut butter until peanut butter is melted; stir in vegetables. Heat to boiling, stirring frequently. Stir before serving.

Expert Tips

  • Store brown sugar tightly sealed to prevent caking.
  • If you can't find the veggie blend called for here, go ahead and use any frozen stir-fry blend.
