Cracker-Crusted Mustard Fish

Your favorite snack crackers make a great coating for these mustard- and thyme-scented fish fillets. MORE + LESS -

Ingredients

Savory crackers
Fish fillet
Egg
Dijon mustard
Fresh or dried thyme leaves
Butter or margarine

    Crush enough crackers to coat fish (about 1/2 cup to 1 pound fish). Mix egg, mustard and thyme (about 2 teaspoons mustard and 1 teaspoon chopped fresh thyme to 1 pound fish). Dip fish into mustard mixture, then coat with cracker crumbs.

    Place fish on ungreased cookie sheet; drizzle with butter. Bake at 500ºF about 10 minutes, turning fish once, until golden brown.
