cup water
cup sugar
cups (1 12-oz. package) fresh cranberries, rinsed and picked over
cups Yoplait® Greek vanilla yogurt

    In a medium saucepan over high heat, stir together water and sugar and bring to a boil. Stir until sugar is dissolved.

    Carefully add cranberries, taking care not to let the boiling water splatter. Return to a boil, then reduce heat to medium-low and simmer for about 10-15 minutes, until the cranberries begin to burst.

    Remove from heat and let cool to room temperature. Then refrigerate until cool. (The cranberries will thicken as they cool.)

    When cool, layer the cranberry sauce and Greek yogurt in small serving dishes to make mini-parfaits.

    Optional: Top with a pinch of sugar or edible glitter for a sparkling touch!

  • These quick and easy little parfaits will make your Thanksgiving a little sweeter!

    Growing up as a picky eater who did not like turkey, stuffing, sweet potatoes or green beans, I think it’s safe to say that navigating the massive buffets at Thanksgiving was a bit of a challenge.  But for me and everyone else at the “kids” table, cranberries always came to our rescue!

    So for your kiddos, or the young at heart of all ages, here’s a fun twist on your cranberries this year -- these Mini Cranberry Yogurt Parfaits!  They are all of the goodness of a fresh, whole-berry cranberry sauce layered with vanilla Greek yogurt.  Super simple, a little healthier with that added Greek yogurt bonus, and wonderfully sweet and delicious.

    For an extra fun “sparkle” for the kiddos, you can even sprinkle some edible glitter or a pinch of sugar on top.

    Here’s the how-to:

    Start with a bag of fresh cranberries.  Give them a good rinse and pick them over to sort out any duds.

    Then whip up some traditional cranberry sauce.  Bring some sugar and water to a boil until the sugar is dissolved, then add the cranberries and return the mixture to a boil.  Reduce the heat and simmer for about 10-15 minutes, or until those berries begin to pop.  That’s when you know they’re ready!

    Then remove from heat and let the sauce cool, and then pop it in the refrigerator to let it completely cool and thicken.

    Once the sauce is ready, layer the cranberry sauce and some yummy Greek yogurt together to make the parfaits.  If you want to make them extra kid-friendly, feel free to add a little sugar or edible glitter on top!

    Seriously, so simple.  And so yummy!  Such a fun twist on traditional cranberry sauce!
