Expert Tips

  • Moo Goo Gai Pan is a descriptive recipe name that means chicken and mushrooms in Chinese.
  • Bamboo shoots, a common ingredient in Chinese recipes, may be available fresh in Asian markets but are more typically sold in cans. The ivory-colored vegetable adds mild flavor and a bit of texture to stir-fries.
  • Use canned Chinese straw mushrooms or fresh shiitake mushrooms in place of the canned button mushrooms.
