Easy Southwestern Stroganoff (lighter recipe)

Ingredients

pound extra-lean ground beef

cup water

jar (16 ounces) Old El Paso™ Thick 'n Chunky salsa

cups uncooked wagon wheel pasta (4 ounces)

teaspoon salt
1/2
cup fat-free sour cream

    Cook beef in 10-inch nonstick skillet over medium-high heat about 6 minutes, stirring occasionally, until brown; drain.

    Stir in water, salsa, pasta and salt. Heat to boiling; reduce heat to low. Cover and simmer about 15 minutes, stirring occasionally, until pasta is tender. Stir in sour cream; cook just until hot.

Expert Tips

  • Extra-lean ground beef may cost more than its higher-fat counterparts, but less fat means less shrinkage, so you end up with more meat in the end.
  • Use one of the flavor-enhanced salsas such as cilantro or chipotle pepper to give this dish even more zing!
