Gluten-Free Chocolate Cupcakes with Cream Cheese Icing

box Betty Crocker™ Gluten Free devil's food cake mix

cup grated peeled zucchini
1/4
cup butter, softened

cup buttermilk
1/4
teaspoon baking soda

Cream Cheese Icing

tablespoon butter

oz (half of 8-oz package) 1/3-less-fat cream cheese (Neufchâtel), softened
1 1/2
cups powdered sugar, sifted

teaspoon fat-free (skim) milk
1/4
teaspoon gluten-free vanilla

Garnish, if desired

    Heat oven to 350°F. Place paper baking cup in each of 15 regular-size muffin cups.

    In large bowl, beat Cupcake ingredients on low speed with electric mixer 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Divide batter among muffin cups, filling each two-thirds full.

    Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely on cooling rack, about 30 minutes.

    In medium bowl, beat Icing ingredients with electric mixer on medium speed 1 minute, scraping bowl occasionally. Frost cooled cupcakes with icing. Top with chocolate shavings.
