Indulge in this gluten-free version of the classic layered mint brownie bar.

Small amounts of mint extract provide a lot of impact. If you like more of a mellow mint flavor, add the mint extract gradually to the filling, tasting as you go.
For easier cutting and quick cleanup, line pan with foil, then spray foil with cooking spray. After the bars are completely set, lift bars out of pan with foil to cutting board. Peel foil back from sides, and cut bars.
