Beautiful and healthful, this salad is a composition of sweet, salty, savory and crunchy. A little splash of vanilla in the dressing adds surprising depth of flavor. MORE + LESS -

Ingredients

tablespoon lemon juice

teaspoon olive oil

teaspoon vanilla

firm-ripe pears, cored and thinly sliced

apple, cored and thinly sliced

cup spinach leaves, torn into bite-size pieces

tablespoon sliced almonds, toasted

oz chèvre (goat) cheese, crumbled

    In large bowl, beat lemon juice, honey, oil, vanilla and pepper with whisk. Add pears, apple and spinach; toss to coat.

    Divide mixture among 4 serving plates. Top with almonds and cheese.

Expert Tips

To toast almonds, sprinkle in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until almonds begin to brown, then stirring constantly until almonds are light brown.
