More About This Recipe

  • Caprese on grilled biscuits -- summer just got even better.

Living in a loft, I sadly don’t have access to an outdoor grill anymore. But thanks to my trusty grill pan, I’ve still been having a blast grilling up all of my favorite foods this summer!

Since I’m on a total caprese kick, I decided to give some of my favorite sandwiches a new twist this week by popping them on my “grill.” AND, to make them all cute and round and extra-tasty, I decided to use Pillsbury™ Grands!™ biscuits as the bread.

Um, ridiculously cute. And ridiculously GOOD!

Loved the classic pesto+mozzarella+tomato combination in these Grilled Caprese Sandwiches. And those grilled buttery biscuits were the icing on top. Or, rather, the biscuits on top!

Definitely a great recipe for entertaining or just enjoying the classic caprese flavors you love.

First, start with Pillsbury™ Grands!™ Southern Homestyle refrigerated biscuits (any flavor) .

Whip them up according to package instructions.

    Easy peasy.

Then once the biscuits have cooked, pop them on your grill or grill pan for a minute or so per side, until those lovely grill marks appear.

Remove the biscuits, then slice in two to make your biscuit sandwich.

Then layer in a tablespoon or two of your favorite pesto, a slice of fresh tomato and fresh mozzarella, and voila!!! You’re good to go!

If you want to be cute and garnish too, I just tied a fresh chive (carefully) around a toothpick. Easy, quick, and tres adorable!
