Adorable caprese sandwiches...on the grill! MORE + LESS -

Ingredients

can Pillsbury™ Grands!™ Homestyle refrigerated biscuits, baked according to package instructions
4
tomatoes, cut into 1/2-inch slices
2
balls fresh mozzarella, cut into 1/2-inch slices
1/2
cup pesto

    Preheat your grill or grill pan to medium-high heat. Place the biscuits on the grill for one minute per side, or until grill marks appear. Remove from heat, then slice in half to make sandwich slices.

    Spread one tablespoon of pesto on one half of the biscuit. Then layer with a slice of tomato and fresh mozzarella, and top with the other half of the biscuit. Repeat with remaining sandwiches.

    Garnish with a toothpick tied with a fresh chive, if desired.

Caprese on grilled biscuits -- summer just got even better.

Living in a loft, I sadly don’t have access to an outdoor grill anymore. But thanks to my trusty grill pan, I’ve still been having a blast grilling up all of my favorite foods this summer!

Since I’m on a total caprese kick, I decided to give some of my favorite sandwiches a new twist this week by popping them on my “grill.” AND, to make them all cute and round and extra-tasty, I decided to use Pillsbury Grands biscuits as the bread.

Um, ridiculously cute. And ridiculously GOOD!

Loved the classic pesto+mozzarella+tomato combination in these Grilled Caprese Sandwiches. And those grilled buttery biscuits were the icing on top. Or, rather, the biscuits on top!

Definitely a great recipe for entertaining or just enjoying the classic caprese flavors you love.

First, start with Pillsbury Grands! Homestyle biscuits.

Whip them up according to package instructions.

Easy peasy.

Then once the biscuits have cooked, pop them on your grill or grill pan for a minute or so per side, until those lovely grill marks appear.

Remove the biscuits, then slice in two to make your biscuit sandwich.

Then layer in a tablespoon or two of your favorite pesto, a slice of fresh tomato and fresh mozzarella, and voila!!! You’re good to go!

If you want to be cute and garnish too, I just tied a fresh chive (carefully) around a toothpick. Easy, quick, and tres adorable!
