Mix orange peel, orange juice, gingeroot and oil (about 1 teaspoon grated orange peel, 1/4 cup orange juice, 1 teaspoon finely chopped gingerroot and 2 teaspoons oil per pound of fish). Marinate fish in orange juice mixture at least 1 hour before grilling. Remove fish from mariade; reserve marinade.<BR><BR>
<B>To Grill:</B> Spray grill rack with cooking spray before heating grill. Place fish steaks on grill rack. Cover and grill 4 inches from medium heat 10 to 20 minutes, brushing occasionally with marinade and turning once, until fish flakes easily with fork.
