Ham´n Spinach Oven Frittata

Ingredients

cups finely crushed herb-seasoned stuffing mix

(9-oz.) pkg. frozen spinach, thawed, squeezed to drain*

(24-oz.) container (3 cups) nonfat cottage cheese

(4-oz.) pkg. (1 cup) crumbled garlic-herb flavored feta cheese

cup chopped 97% fat-free cooked ham

    Spray two 9-inch glass pie pans with nonstick cooking spray. Sprinkle 2 tablespoons stuffing crumbs evenly over bottom of each pan. Reserve 1/4 cup crumbs for topping.

    In large bowl, beat eggs and egg whites. Stir in remaining 1 1/4 cups crumbs and all remaining ingredients; mix well. Carefully spread mixture evenly over crumbs in pans. Cover with plastic wrap; refrigerate at least 4 hours or overnight.

    Heat oven to 350°F. Uncover pans; sprinkle each with 2 tablespoons reserved crumbs. Bake at 350°F. for 45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Cut into wedges to serve.

  • * To quickly thaw spinach, cut small slit in center of pouch; microwave on HIGH for 2 to 3 minutes or until thawed. Remove spinach from pouch; squeeze dry with paper towels.
  • The more details you take care of the night before, the more time you'll have in the morning to sip your coffeee and enjoy your gurests. • Mix up ingredients for the baked dish; refrigerate. • Set the table. • Measure the coffee, but for the freshest flavor, don't draw the water until morning. • Prepare juice; refrigerate. •Assemble the ingredients for any specialty drinks (Mimosas, bloody Marys, etc.)
