Ingredients

1/2
pound flank steak, sliced thin
1/3
cup Yoplait® Greek plain yogurt
2
teaspoons spicy curry powder
2
tablespoons olive oil
1
(13.8 oz.) can Pillsbury™ refrigerated pizza crust
4
tablespoons red harissa
1
cup fresh broccoli florets
Pinch of salt and pepper
6
oz. goat cheese, crumbled
Roasted cashews, pomegranate arils and additional Yoplait® Greek plain yogurt, for serving (optional)

    Preheat the oven to 425ºF.

    In a bowl, toss together the flank steak, yogurt, curry powder and 1 tablespoon olive oil.

    Unroll the pizza dough and roll it out as thin as you can on a piece of parchment paper. Transfer the dough to a cookie sheet. Spread the dough with the harissa. Toss the broccoli with the remaining tablespoon of olive oil and a pinch of salt + pepper. Add the broccoli and goat cheese to the dough.

    Bake for 10-12 minutes, or until the flatbread is crisp and the broccoli lightly charred.

    Meanwhile, heat a large skillet over high heat. Cook the beef until charred and cooked through. Top the pizza with the beef, pomegranate arils and roasted cashews. Serve with yogurt if desired.

Expert Tips

  • To make this vegetarian, swap the beef for chickpeas and instead of cooking the chickpeas in a skillet, just add them to the flatbread before baking.
  • You can also swap out the broccoli with bell peppers, or better yet, use both veggies!
  • Harissa is a spicy Moroccan red pepper sauce and can be found in the ethnic isle of most grocery stores.
