Pecan Double Chocolate Chip Cookies

Ingredients

cup I Can't Believe It's Not Butter!® spread
3/4
cup packed brown sugar
1/4
cup granulated sugar

teaspoon vanilla

egg

cups Gold Medal™ all-purpose flour

teaspoon baking soda
1/2
teaspoon salt

cups chopped pecans, toasted and cooled completely
1
cup white baking chips
1
bag (12 ounces) semisweet chocolate chips (2 cups)

    Heat oven to 375°F.

    Beat spread and sugars in large bowl with electric mixer on medium speed 4 minutes. Beat in vanilla and egg. Beat in flour, baking soda and salt on low speed. Stir in pecans and chips.

    Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until edges are golden (do not overbake). Immediately remove from cookie sheet to wire rack.

Expert Tips

  • (Total time will vary; cook or bake time is per batch.)
  • To toast pecans, bake in an ungreased shallow pan in a 350°F oven for 6 to 10 minutes, stirring occasionally, until light brown.
  • Measure flour and granulated sugar by spooning it lightly into a dry-ingredient measuring cup, then leveling it off with the straight edge of a spatula or knife. Pack brown sugar into the cup before leveling.
  • Stack two or three cookies and wrap in plastic wrap or cellophane, then tie with a ribbon for a festive lunch-box treat.
