Mix apple butter, onion and pepper (about 2 tablespoons onion and 1/4 teaspoon pepper to 1/2 cup apple butter). Cook chops as desired below, turning occasionally and brushing with apple butter mixture, until slightly pink when cut near bone.

To Broil: Broil chops 3 to 4 inches from heat, 19 to 22 minutes for 1 1/2-inch thick chops.
To Grill: Cover and grill chops 3 to 4 inches from medium heat, 12 to 16 minutes for 1 1/2-inch thick chops.
