  • The chicken can also be used for other dishes like enchiladas, Mexican tortilla pie and chili.
  • Make it FRESH toppings: tomato salsa or pico de gallo, lettuce, diced avocado, fresh lime wedges, crumbled queso fresco cheese.

More About This Recipe
  • Growing up, tacos were a staple in my household. They were just something that everyone liked, and they were easy and quick. So naturally, my dad (who did the cooking mom handled dessert) relied on his simple beef taco recipe A LOT. Us kids didn’t mind. I mean, who doesn’t love a good taco? As I have gotten older, however, I have learned there are MANY other tacos then just the beef taco. Fish tacos, pulled pork tacos, carne asada tacos.... and all the toppings! Fruit salsa, guacamole, CHEESE. YUM. Gimme all the tacos please! Today I’m sharing my favorite go-to shredded chicken taco. Just like my dad’s beef tacos, these shredded chicken tacos are now a staple. They’re quick, easy and a little healthier than their beefy friend. These tacos need just a few ingredients and then you can go all out with your toppings—or just be super simple and add cheese. Totally your call! Once the chicken is all cooked and shredded, it's time to put together the best tacos ever! I put cheese, jalapenos and fruit salsa on mine. Yum!
