Sizzling Hot Fajita Salad

Ingredients

cup fat-free sour cream

tablespoons vegetable oil

teaspoon lime juice

teaspoon sugar

teaspoon ground cumin

lb refrigerated seasoned boneless skinless chicken breasts, cut into bite-size strips

medium onions, cut into thin wedges
1
medium red or green bell pepper, cut into small pieces

cup Old El Paso™ Thick 'n Chunky salsa

cups torn romaine lettuce

    In small bowl, mix sour cream, oil, lime juice, sugar and cumin until well blended; set aside.

    Heat 12-inch nonstick skillet over medium-high heat. Cook chicken in skillet 2 minutes, stirring frequently, until no longer pink in center and light brown on outside. Stir in onions and bell pepper; cover and cook 2 minutes.

    Stir in salsa. Cook 3 to 5 minutes, stirring constantly, until vegetables are crisp-tender.

    To serve, arrange lettuce on individual dinner plates. Top each with hot chicken mixture. Spoon sour cream mixture over salad.

Expert Tips

  • Unseasoned chicken breasts, cut into bite-size pieces, can be used for the seasoned chicken breasts; the flavor will be milder.
  • Corn bread makes a tasty accompaniment for this salad.
